Dads (J’s) Apple pie is a dessert you are definitely going to find on our table during this time of year. J has been making it for years and honestly you just can’t go wrong, but it can get better… and this apple crumble cake is the proof in the pudding. 
Soft vanilla sponge, saucy cinnamon apples and a brown sugar crumble. Drool worthy right??? 

Ingredients

  • Cake
  • 1 cup butter, melted

  • 3/4 cup milk

  • 4 large eggs

  • 2 teaspoons vanilla extract

  • 2 cups brown sugar

  • 2 cups all purpose flour

  • ½ tsp salt

  • ½ tsp baking soda

  • The Apple Topping
  • 2 granny smith apples, cubed

  • 2 tsp cinnamon

  • 1/4 cup sugar

  • Juice of 1 lemon

  • Crumble Topping
  • 1 tbsp cinnamon 

  • 1/4 cup salted butter, melted

  • 1/2 cup light brown sugar

  • 1 cup all purpose flour

  • The Apple Glaze
  • 2 tsp macerated apple juice

  • 1/2 cup icing sugar

Directions

  • Preheat the oven to 190°C. Grease and line a springform cake tin. In a small bowl, combine apples, cinnamon, granulated sugar, and lemon juice. Allow it to sit till the sugar dissolves and a syrup forms.
  • In a large bowl, whisk together butter, milk, eggs, vanilla extract, and brown sugar for the cake batter. Whisk for 2-3 minutes until well combined.
  • Add the flour, salt, and baking soda to the wet ingredients. Mix until the batter is smooth.
  • Pour the batter into the prepared baking pan. Drain the juices from the marinated apples and set aside. Arrange the cubed apples on top of the cake batter.
  • In a separate bowl, combine cinnamon, melted butter, brown sugar, and flour for the crumble topping. Sprinkle the crumble over the apple slices.
  • Bake for 1 hour or until a toothpick inserted into the centre comes out clean.
  • Allow the cake to cool for 20-30 minutes.
  • Prepare the glaze by combining the apple syrup and icing. Drizzle the glaze over the cooled cake.
