Lamb chops with olive salsa

No lamb, no Christmas? lol 

Ingredients

  • 12 lamb loin chops

  • Salt

  • Pepper

  • 1 tbsp dried rosemary

  • 1 tbsp dried oregano

  • 1 tbsp dried parsley

  • 1 tbsp cumin

  • 1 tbsp smoked paprika

  • 2 tsp lemon zest

  • 1 tsp onion powder

  • 1 tsp ground mustard

  • ½ tsp salt

  • ½ tsp ground black pepper

  • 2 tsp mint 

  • Olive salsa
  • 2 packets pitted olives, black and green

  • 1/4 cup olive oil

  • 2 tsp honey

  • 1 tsp chilli flakes (or to taste)

  • 1/4 cup of italian parsley, chopped

  • 1 clove of garlic, crushed

  • Zest of 1 lemon

  • Juice of 1 lemon

Directions

  • Add all ingredients to a small bowl and mix together. Use as a dry rub on lamb for grilling, roasting, and smoking.
  • On a hot grill, grill the lamb chops until cooked to your liking, we like ours well done.
  • Olive Salsa
  • Roughly chop the olives.
  • Combine the olive oil, honey, chilli, garlic, parsley, lemon zest, lemon juice & pepper.
  • Mix well. Pour over the olives, mix and set aside.
