No lamb, no Christmas? lol
Ingredients
12 lamb loin chops
Salt
Pepper
1 tbsp dried rosemary
1 tbsp dried oregano
1 tbsp dried parsley
1 tbsp cumin
1 tbsp smoked paprika
2 tsp lemon zest
1 tsp onion powder
1 tsp ground mustard
½ tsp salt
½ tsp ground black pepper
2 tsp mint
- Olive salsa
2 packets pitted olives, black and green
1/4 cup olive oil
2 tsp honey
1 tsp chilli flakes (or to taste)
1/4 cup of italian parsley, chopped
1 clove of garlic, crushed
Zest of 1 lemon
Juice of 1 lemon
Directions
- Add all ingredients to a small bowl and mix together. Use as a dry rub on lamb for grilling, roasting, and smoking.
- On a hot grill, grill the lamb chops until cooked to your liking, we like ours well done.
- Olive Salsa
- Roughly chop the olives.
- Combine the olive oil, honey, chilli, garlic, parsley, lemon zest, lemon juice & pepper.
- Mix well. Pour over the olives, mix and set aside.
